Ingredients:
3 medium zucchinis, diced into rounds, about 1 inch thick
½ onion, roughly chopped
Several cloves of garlic - I used 12-15!
Olive oil
1-2 tablespoons butter
1 cup provolone cheese, grated
1 cup parmesan cheese, grated
1 lb spaghetti
salt/pepper to taste
Fresh basil
Red pepper flakes optional
Instructions:
Preheat oven at 400F
Prepare zucchini, onion, garlic. Toss them in olive oil, salt and pepper and lay flat on baking sheet
Roast for 20-30 mins or until zucchinis are nicely brown
Half way through the roasting, bring pasta water to boil
Cook spaghetti to al dente. Reserve some pasta water
Heat oil and butter in a big pan. Add veggies, then spaghetti. Toss with cheeses, basil, salt and pepper. Garnish with more basil and red pepper
