Zucchini Spaghetti (Spaghetti alla nerano)

Ingredients:

  • 3 medium zucchinis, diced into rounds, about 1 inch thick

  • ½ onion, roughly chopped

  • Several cloves of garlic - I used 12-15!

  • Olive oil

  • 1-2 tablespoons butter

  • 1 cup provolone cheese, grated

  • 1 cup parmesan cheese, grated

  • 1 lb spaghetti

  • salt/pepper to taste

  • Fresh basil

  • Red pepper flakes optional


Instructions:

  • Preheat oven at 400F

  • Prepare zucchini, onion, garlic. Toss them in olive oil, salt and pepper and lay flat on baking sheet

  • Roast for 20-30 mins or until zucchinis are nicely brown

  • Half way through the roasting, bring pasta water to boil

  • Cook spaghetti to al dente. Reserve some pasta water

  • Heat oil and butter in a big pan. Add veggies, then spaghetti. Toss with cheeses, basil, salt and pepper. Garnish with more basil and red pepper
