Ingredients:
1 cup dried Rancho Gordo white beans (Cassoulet or Aroyo Blanco), soaked over night, and slow cooked or pressure cooked (instant pot) until soft
3 cloves garlic
½ cup chopped onion
Salt/ Pepper
1 tablespoon olive oil
2 cups tomatoes, chopped
½ cup fresh basil and parsley, chopped
Grated parmesan cheese, optional
Instructions:
Sauté garlic, onions in hot oil, add beans, stir until warm
Put chopped tomatoes and herbs on a serving plate
Pour the warm beans over the tomatoes
Salt and pepper to taste
Sprinkle with grated parmesan if desired
