White Beans & Tomato Salad

Ingredients:

  • 1 cup dried Rancho Gordo white beans (Cassoulet or Aroyo Blanco), soaked over night, and slow cooked or pressure cooked (instant pot) until soft 

  • 3 cloves garlic

  • ½ cup chopped onion

  • Salt/ Pepper 

  • 1 tablespoon olive oil 

  • 2 cups tomatoes, chopped

  • ½ cup fresh basil and parsley, chopped 

  • Grated parmesan cheese, optional 

Instructions:

  • Sauté garlic, onions in hot oil, add beans, stir until warm

  • Put chopped tomatoes and herbs on a serving plate

  • Pour the warm beans over the tomatoes 

  • Salt and pepper to taste

  • Sprinkle with grated parmesan if desired
