Ingredients:
3 cloves garlic, minced
3 tablespoons tomato paste
1 can diced tomatoes
1 can white beans of your choice (or 2 cups cooked beans from dried beans)
1 teaspoon dried oregano
1 tablespoon oil
Salt and pepper to taste
Instructions:
Heat garlic, oregano, salt and pepper in oil
Add tomato paste and diced tomatoes
Add beans
Simmer for 10-15 mins
Enjoy with crusty bread or rice
