Ingredients:
1 lb shrimp, shelled
1 tablespoon thai curry paste (any type)
¼ cup scallion or cilantro
1 egg
½ cup panko bread crumbs
Black pepper
1 tablespoon soy sauce
1 teaspoon sesame oil
Instructions:
Put shrimp in a food processor, pulse a few seconds
Put the rest of the ingredients in the food processor
Pulse until combined
Form patties with your hands (wet them first), set aside
Heat sesame oil in heated pan
Cook patties a few minutes on each side until golden brown
Ingredients for the dipping sauce
¼ cup mayonnaise
1 teaspoon sriracha sauce
a bit of chopped scallions
1 teaspoon soy sauce
Cracked black pepper
Juice of ½ lemon
Mix all ingredients in a bowl and adjust taste as desired
