Spinach and Artichoke Pasta Bake



Ingredients:

  • 3-4 cups fusili pasta (or other pasta)

  • 1, 32 oz jar pasta sauce (Carfagna is what I use)

  • ½ cup ricotta cheese

  • 3 tablespoons pesto

  • 3 cloves garlic minced

  • 16 oz water

  • 3-4 cups chopped fresh spinach

  • 12 oz jar artichoke, drained

  • 1 tablespoon olive oil

  • Salt / pepper

Instructions:

  • Preheat oven at 400F

  • In a 9x13 baking dish, combine all ingredients, mix well

  • Cover with foil and bake for 35-40 mins

  • Check around 30 mins and stir. Bake until pasta is al dente

  • Serve with grated parmesan cheese and fresh basil
