Ingredients:
1 tablespoon olive oil
¼ cup onion, chopped
3-4 cloves garlic, minced
1-2 tablespoons fresh ginger, minced (optional)
3-4 cups green vegetables like celery, spinach, broccoli, chard, zucchini
4 cups broth
salt/pepper to taste
Instructions:
Heat oil in pot
Add onion, garlic, ginger, salt and pepper. Saute until onions are translucent
Add veggies and broth
Cover to simmer until all veggies are soft
Blend until smooth using a food blender or a hand immersion blender
Garnish with seeds, herbs, sour cream, or on its own
Enjoy with bread, cheese, or again, on its own!
