Ingredients:
2 cups old bread, cubed
¼ cup onions, diced
3-4 cups spinach or any greens, chopped
3 eggs
3 cups milk (plant based or regular)
1 tablespoon oil
1 teaspoon dried oregano (or other herbs you like)
¼ cup grated cheese (optional)
Salt and pepper to taste
Instructions:
Preheat oven at 375º
Sauté vegetables in oil until soft in oven proof pan (like a cast iron skillet)
Mix bread, egg, milk together
Add bread mixture to pan
Sprinkle cheese on top
Finish cooking in oven at 375ºF for 15-20 minutes
