Ingredients:
2 cups old bread, cubed
2-3 cups vegetables (I used zucchini, broccoli, mushrooms, onions), chopped
2-3 roma tomatoes
1 tablespoon olive oil
8 eggs
1 cup milk (regular or plant based)
1 cup grated cheese (regular or plant based)
Salt and pepper to taste
Instructions:
Grease baking dish (8x8 or 9x9)
Cover bottom of baking dish with bread cubes
Sauté vegetables in oil until soft
Layer vegetables over bread
Cut up tomatoes, place over vegetable layer
Mix eggs, milk and cheese, salt and pepper
Pour over other ingredients in baking dish
Cover dish, bake at 350ºF for 30 minutes
Serve warm with a side salad and a dollop of salsa if you like
