Ingredients:
1 can, 15 oz pumpkin puree or about 2 cups homemade
2 eggs
2 tablespoons oil
½ cup maple syrup
1 teaspoon vanilla extract
1 teaspoon pumpkin spice
1 teaspoon ground ginger
2 1/2 cups flour (regular or gluten free)
1 teaspoon baking soda
½ teaspoon salt
Chocolate chips (optional)
Instructions:
Preheat oven 350ºF
In a stand mixer, combine wet ingredients
Add dry ingredients just to mix together
Pour batter into greased 9x5 loaf pan
Bake for 50 minutes
