Ingredients:
2 tablespoons olive oil
1 large onion, chopped
2 celery stalks, diced
1 large carrot, diced
Salt and freshly ground black pepper
4 large garlic cloves, minced
1 teaspoon dried oregano
1/4 cup dry white or red wine
1 cup greens or brussel sprouts, chopped or torn
1 can crushed tomatoes (28oz)
1 pound cooked firm-tender giant white beans
1/2 pound mozzarella, coarsely grated
1/3 cup grated Parmesan
2 tablespoons fresh parsley or basil, chopped
Instructions:
Heat oven proof pan with oil
Saute all the veggies until soft
Add salt, pepper, oregano, wine, Add tomato puree, beans
Let simmer for 15-20mins, covered, stir occasionally
Sprinkle with cheeses
Finish in the oven at 350ºF for 10-15 mins or until cheese is brown to your liking
