Ingredients:
2-3 cups cooked penne pasta (or other shapes as you like)
2-3 tablespoons olive oil
2-3 cups tomatoes (fresh or canned)
½ medium size onion, chopped
2-3 cloves garlic, chopped
½ cup olives, chopped
2 tablespoons small capers
3-4 pieces of anchovies
Fresh basil
Salt and pepper to taste
Red pepper flakes (optional)
Instructions:
Cook pasta as directed on the container, set aside
In a pan, sauté onions and garlic with olive oil
Add tomatoes, and half of the basil
Salt and pepper to taste
Add anchovies, red pepper flakes, olives, capers
Sauté and then simmer at least 20 minutes
Add cooked pasta to the pan, mix well
Garnish with the rest of fresh basil
