Ingredients:
1-2 tablespoon sesame oil
2 lbs Rockfish fillet (about 2 pieces)
2 eggs
1 cup panko (Japanese breadcrumbs)
¼ cup Furikake (seaweed/sesame flavoring)
Salt and pepper to taste
Instructions:
Thaw fish, cut into fillets
Prepare scramble eggs and panko/furikake mixture “stations”
Dredge each fillet in egg first, then panko mixture
Heat skillet/pan with sesame oil
Sear fish, 4-5 min on each side until the crust is brown and fish meat is cooked through.
