Ingredients:
½ onion, sliced
2 cloves garlic, minced
1-2 tablespoons vegetable oil
1-2 cups of vegetables like broccoli, zucchini, tomatoes, carrots
1-2 tablespoons fresh basil, chopped
2 eggs
1 handful pad thai rice noodles
3 tablespoons Pad Thai sauce
Fish sauce, black pepper to taste
Peanuts and fresh cilantro to garnish
Instructions:
Pour hot water over pad thai noodles (or cook as instructed to al dente), set aside
Sauté onions and garlic in oil in pan
Add vegetables, shrimp… then eggs. Stir them together.
Add fresh basil
Add the rice noodles, use tongs to toss
Add fish sauce and pepper to taste
Sprinkle peanuts and fresh cilantro before serving
Makes about 2 servings
