One Pan Miso Honey Salmon & Veggies

Ingredients:

  • 3 pieces salmon fillets  (about ¼ lb each) from Wild for Salmon

  • 3 cups chopped vegetables in large chunks

  • 3 tablespoons miso paste

  • 3 tablespoons honey

  • 3 tablespoons soy sauce (I used garlic coconut aminos)

  • 3 tablespoons rice vinegar

  • 2 cloves garlic & 1 inch fresh ginger, grated with a microplane 

  • 2 tablespoons sesame oil 

  • 1 tablespoon sesame seeds (optional)

  • Crushed black pepper (optional)


Instructions:

  • Preheat oven to 400F

  • Make the marinade with all the ingredients, mix well

  • Pour about half on the salmon fillet, set aside

  • Pour the other half of the marinade on the vegetables, toss well

  • Place everyone on a tin-foil lined pan 

  • Roast in oven for 15-20 mins until the salmon is cooked, and the vegetables are cooked to your liking

Serve with rice, or enjoy just the fish and vegetables as a complete meal!
