Ingredients:
2 medium delicata squashes
3 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon maple syrup
Salt/Pepper
Instructions:
Preheat oven at 425ºF
Cut squashes in half lengthwise, scoop out the seeds, cut into 1 inch pieces
Put squash pieces in a big bowl and add the rest of ingredients, toss well
Transfer to baking pan, arrange so that each piece of squash has room
Roast for 10 mins on each side, or until well done. If you don’t want to flip half way, roast for 20-25 minutes on one side.
