Ingredients:
½ small onions, chopped
¼ cup mushrooms, quartered
1 cup kale, chopped
¼ cup japanese sweet potato, cubed
1 tablespoon olive oil
2 eggs
Salt and pepper to taste
Water or broth as needed
Instructions:
Heat oil in pan
Sauté onions, sweet potatoes together until soft (add water and cover for a few minutes)
Add the rest of veggies, kale last, stir well
Salt and pepper to taste
Make two small holes in pan
Crack an egg in each hole, cover with lid until eggs are cooked as desired
Garnish with salsa, avocado, and/or sour cream. Enjoy alone or a piece of toast!
