Ingredients for the chickpeas
1 can chickpeas, drained
1 small purple onion, diced
2-3 small potatoes, diced
2-3 cloves garlic
1 inch fresh ginger, minced
A few tomatoes, roughly chopped
1 teaspoon curry powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1 tablespoon ghee or olive oil
Salt and pepper
Ingredients for the yogurt sauce:
¾ cup greek yogurt, sour cream or skyr
1 small cucumber, grated
A handful of fresh mint and cilantro, chopped
1 garlic clove, minced
1 lemon for juice and zest
Salt and pepper
Instructions:
Preheat oven at 400F
Combine chickpea ingredients in a bowl, toss well
Lay on baking pan, spread evenly
Roast for 20-30 minutes
While waiting for the chickpeas to roast, assemble yogurt sauce in a bowl. Adjust taste as you go.
Serve chickpeas on naan or pita bread with a generous helping of yogurt sauce!
