Indian Spiced Chickpeas with Cooling Yogurt Sauce

Ingredients for the chickpeas

  • 1 can chickpeas, drained

  • 1 small purple onion, diced

  • 2-3 small potatoes, diced

  • 2-3 cloves garlic

  • 1 inch fresh ginger, minced

  • A few tomatoes, roughly chopped

  • 1 teaspoon curry powder

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • 1 tablespoon ghee or olive oil

  • Salt and pepper


Ingredients for the yogurt sauce:

  • ¾ cup greek yogurt, sour cream or skyr

  • 1 small cucumber, grated

  • A handful of fresh mint and cilantro, chopped

  • 1 garlic clove, minced

  • 1 lemon for juice and zest

  • Salt and pepper

Instructions:

  • Preheat oven at 400F

  • Combine chickpea ingredients in a bowl, toss well

  • Lay on baking pan, spread evenly

  • Roast for 20-30 minutes

  • While waiting for the chickpeas to roast, assemble yogurt sauce in a bowl. Adjust taste as you go.

  • Serve chickpeas on naan or pita bread with a generous helping of yogurt sauce!
