Ingredients:
3 very ripe bananas, mashed
½ cup grated carrots
2 eggs
½ cup yogurt
½ cup sugar
½ cup rolled oats
¼ cup oil
1 ¼ cup flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ cup dried cranberries
½ cup mini chocolate chips (optional) for sprinkles
Instructions:
Preheat oven at 350F
Mix all ingredients (flour last - don’t over mix) in a stand mixer or by hand in a large mixing bowl
Fill muffin tins half way (I use these silicone ones)
Bake for 30 mins
Makes 12 muffins
