Greek Potatoes

Ingredients:

  • 3 pounds yukon gold potatoes, chop in big chunks or whole if not too big

  • ½ cup olive oil

  • ½ cup water

  • Juice from 3 lemons

  • Garlic, herbs (like rosemary and oregano), salt and pepper to your liking


Instructions:

  • Prepare potatoes, place in large baking dish

  • Add oil, water, lemon juice, salt and pepper

  • Cover and bake at 400º for 1 hour

  • Let rest for at least an hour

  • Add minced garlic, and herbs

  • Bake again for 1 hour at 375º
