Ingredients:
2 cups mushrooms - any variety
4-6 cloves garlic, minced
1 15oz can diced tomato
1 tablespoon olive oil
½ cup fresh parsley, chopped
Salt and pepper to taste
Instructions:
Heat oil in pan
Saute all ingredients together
Let simmer a few minutes
Salt and pepper to taste
Enjoy with crusty bread, rice or noodles...or on its own!
