Fennel bulb is crunchy and refreshing. When it gets marinated with citrus, it gets a little softer, and even more delicious. A great side for your burgers, pasta or other "heavier" meals!
Ingredients:
1 cup finely sliced fennel bulb
¼ cup chooped fennel fronds (optional)
1 cup finely sliced purple cabbage
1 cup grapefruit, or orange sections
Juice of 1 lemon
Drizzle of olive oil
Salt and pepper to taste
Instructions:
Combine all ingredients, toss well
Let salad marinade for 30 minutes at room temperature before serving.
You can add crumbled feta, basil or parsley or chopped nuts or seed to this salad to your liking.
