Ingredients:
1 tablespoon oil
1-2 cups of greens (chard, kale, bok choy, spinach, etc)
Other veggies you like (mushrooms, peppers, zucchini, etc.)
Salt & Pepper to taste
2 eggs
Instructions:
Heat oil in pan
Add your veggies and sauté until soft
Make a “bed” of the veggies
Put eggs on top
Cover until eggs are cooked to your liking
Serve with your favorite salsa if desired
