Ingredients:
1 cup corn kernels (fresh or frozen)
1 medium zucchini, cubed
1 cup cherry tomatoes
¼ onion, chopped
1 teaspoon garlic, chopped
½ jalapeno pepper, chopped (optional)
1 tablespoon olive oil
Fresh herbs like basil, parsley, cilantro, chopped
Salt, pepper to taste
Instructions:
Prepare all the vegetables
Heat oil in pan
Sauté onion, garlic and jalapeno pepper until soft
Add other veggies
Remove from heat when zucchini is soft, transfer to serving plate
Sprinkle with cheese, herbs, salt and pepper
