Ingredients:
3 cups purple cabbage, thinly sliced
1 can chickpeas, drained (or any beans you like)
½ cup arugula (roughly chopped) - more if you’d like
½ cup cilantro, chopped (or parsley)
1 clove garlic, minced
¼ cup sunflower seeds
4 Medjool dates, chopped
½ cup feta cheese, cubed or crumbled
2 tablespoon olive oil
Juice of one lemon
1-2 tablespoons apple cider vinegar
Salt/ pepper to taste
Instructions:
Mix all ingredients together. Adjust lemon juice, salt and pepper as desired!
