Ingredients:
1 cup dry Rancho Gordo Ayocote Morado beans
2 cups tomatoes (fresh or canned)
1 small onion
½ jalapeno pepper
3 cloves garlic
1 teaspoon ground coriander (optional)
1-2 tablespoon fresh herbs like parsley, oregano, basil, cilantro
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Preheat pan with oil
In a food processor, combine all ingredients except oil and beans to make the tomato sauce. Pulse until all blended.
Heat sauce in pan for about 15-20 mins
Add beans to the sauce.
Simmer for at least an hour until well blended. Add salt and pepper to taste
Serve with grains like couscous or rice, guacamole and sour cream on the side
