Ingredients:
One whole cauliflower
2 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon maple syrup
2 cloves garlic, chopped
one handful cilantro, chopped
grated parmesan cheese
red chili flakes (optional)
Instructions:
Preheat oven at 400ºF
Cut bottom of cauliflower (leafs and hard stem parts), place in oven save pot (with lid)
Make the vinaigrette with the rest of the ingredients (without the cheese)
With the cauliflower bottom side up, pour in about half of the vinaigrette
Turn the cauliflower right side up, baste the top with more vinaigrette
Bake cauliflower for 30 minutes
Open lid, pour grated parmesan cheese on top
Continue to bake another 20 minutes or until the cauliflower is cooked through (test with fork or knife)
