Ingredients:
1 medium spaghetti squash
1 medium onion, sliced
2-3 cloves garlic, minced
2 cups chopped cabbage
1 tablespoon olive or avocado oil
1-2 tablespoons balsamic vinegar
Salt and pepper to taste
Grated cheese (optional)
Instructions:
Half the squash, take out the seeds, bake at 400ºF for 45 mins
While squash is roasting, saute cabbage/onion/garlic in oil and balsamic vinegar until nicely brown and caramelized
Add cooked squash to the cabbage, mix well
Transfer mixture back to squash shells
Sprinkle cheese on top and bake until cheese is melted, about 5 mins
