Baked Salmon & Noodles

For the salmon:

  • 1 whole salmon filet, thawed

  • 1 cup cherry tomatoes 

  • 2 tablespoons olive oil

  • 2 tablespoons dijon mustard

  • 2 tablespoons capers with its juice 

  • Juice of one lime or lemon 

  • ¼ cup chopped basil or other fresh herbs 

  • Salt and pepper to taste

Instructions:

  • Put thawed salmon filet in a baking pan

  • Combine the last 6 ingredients to make a marinade, pour over salmon 

  • Add cherry tomatoes - let sit for 15-20 minutes (can be longer if put in refrigerator)

  • Cover pan with foil, and bake salmon at 350ºF for 30 minutes


For the egg noodles with zucchini:

  • Chop zucchini into small chunks

  • Cook noodles as instructed

  • Add zucchini to cook the last minute 

  • Drain pasta/zucchini

  • Toss with pesto and enjoy with a portion of baked salmon
