Baked Rice & Roasted Tomatoes

Ingredients:

  • 2-3 cups cherry tomatoes, or diced tomatoes

  • 5-6 cloves garlic, whole

  • 1 medium onion, roughly chopped

  • ½ cup cilantro stems

  • 1 tablespoon olive oil 

  • 1 teaspoon herbes de provence, or fresh thyme

  • 1 cup basmati rice or rice pilaf

  • 2 cups boiling water 

  • Salt and pepper to taste 

  • Fresh cilantro leaves for garnish 

Instructions:

  • Preheat oven 400ºF

  • Cover bottom of baking dish with tomatoes, onion, garlic. Toss veg with olive oil, salt and pepper

  • Roast in oven for 25-30 mins

  • Take out the baking dish, add the rice and hot water, cover with foil

  • Return dish to oven, increase temp to 425ºF and bake for 25 mins covered. 

  • Uncover, add fresh cilantro to rice and serve warm
