Ingredients:
2-3 cups cherry tomatoes, or diced tomatoes
5-6 cloves garlic, whole
1 medium onion, roughly chopped
½ cup cilantro stems
1 tablespoon olive oil
1 teaspoon herbes de provence, or fresh thyme
1 cup basmati rice or rice pilaf
2 cups boiling water
Salt and pepper to taste
Fresh cilantro leaves for garnish
Instructions:
Preheat oven 400ºF
Cover bottom of baking dish with tomatoes, onion, garlic. Toss veg with olive oil, salt and pepper
Roast in oven for 25-30 mins
Take out the baking dish, add the rice and hot water, cover with foil
Return dish to oven, increase temp to 425ºF and bake for 25 mins covered.
Uncover, add fresh cilantro to rice and serve warm
